There is more to this story than meets the eye and rabbonim were calling Mehlman to give him a piece of their mind. That's why Mehlman dropped the wine part which was then grabbed by Fishelis. The rabbonim then started him to give Fishelis heck.
With the setup there it was not mistaver that the wine was always properly handled.
