They also are very quick to rely on the proprietors if they have the "right look" and come from within their communities. That is a surefire way to miss a problem if there is one - and sadly, there are problems. <br />I've seen chassidshe caterers using non-kosher sinks to wash their dishes - soaking them in the sink with boiling hot water - and the mashgiach was NOWHERE To be found. I've seen much worse too. <br />No hechsher is perfect, but you cannot claim that they have higher standards at all. You need to understand equipment and read the manuals. Like Kashering a steam tower. Questions about what is considered Bishul Yisroel, temperature and methods of kashering between runs, animal/milk derived chemicals and products, and similar issues are differences that are real. There are serious chasidishe hashgochos today who do not rubber stamp the OU. I have nothing against the OU but I like to eat baked products which are pas yisrael, cholov yisrael dairy products, onions and garlic which have not been left cut open overnight, and fresh eggs..... that is the main reason I look for hashgochos which try to comply with all of these. No reason to be offended, no harm meant to the OU, they have some great opinions on which to rely.
