Alert: Rabbi Plutchok re: Machine Matzah, missed completly the serious issues with today's Machine Matzoh ovens.


Reb משה שטרנבוך in חלק ד' דף צ' also seems very concerned about the use of machine Matzos on Pesach.
The ovens commonly used are known as "cracker-ovens". Ther are not at all like the ones that were used years ago which were relativly short ovens, and the dough was in direct contact with the hot stone or metal floor.
A cracker oven is usually some 100 feet long with a minimum of 3 stages. 1st stage is what is called "spring", because the temperature at this stage is low enough that the natural yeast does not die & the dough can rise or spring.
The 2nd stage is a high temperature of short duration, and it gives color to top & bottom. At this stage the interior is still moist.
The 3rd stage is the longest stage of a lower temperature that "dries" (not bake) the interior of the Matzoh.
The Matzos is on a wide mesh and the baking is from the heated air temperature, not from direct contact with the stone or brick oven floor.

1. It should be possible to obtain the same machines that Shtein/Viener used back then that were apparently good. Why isn't being built or obtained?
2. The Badatz has been giving a Kosher L'Pesach hechsher on machine matzos for over 10 years already, so how can it be that the Badatz's Rav Shternbuch is opposed?
What happened ? No one paid you off this year?
Last year you indorsed Bet Shemesh machine matzos. Are they no good this year? Are they using a cracker oven?

Watch out for the hotels cutting corners this year to save some extra dollars. There will be many more hotels this year using the worst quality matzos like the half price ones from Ukraine that taste like cardboard. Bring back up essen for your room so that the operators don’t starve you with smaller meal portions that will often be inedible slop. The biggest worry is them cutting corners on kashrus. Even if they behaved in past years they need to be yorei Shomayim to not succumb to that nisayon this year.

He doesn’t put it in newspaper ads but it’s always been at least in the printed program AFTER you arrive at the hotel if not on the website too from the beginning of the marketing season. Especially when Itche Meyer is partnering with other organizers the choice of hashgochos there haven’t been stellar for the last number of years. He had for a while an overseas Chabadsker dayan. Maybe that dayan is ok if he was there personally but the dayan appointed a Rosh mashgichim for the hotel who is a funny duck. This is a general problem with Chabadskers that they place way too much trust in anyone who happens to be a fellow Lubav or suspiciously self-declared Lubav with a pinched Borsalino. The funny duck runs his own hashgocho which his products are not accepted by establishment hashgochos. The funny duck grada also claims to have semicha from the “Holy Brother” Shloime Carlebach who the Rebbe threw out of Lubavitch
He does not have to get involved with the local 07801 kashrus (or non-kashrus) terrorists. He just puts his name out there and fills as many hotel as he wants with the 'shensteh in de besteh ingelat. in .shaineh yeedin.
