Many shechitas shecht lamb at the rate of 120-160 @ hour. The ratio of glatt runs between 60-80%+. That means the bodek has to check about 95 @ hour (1.5 @ minute?).
There is usually 1 shoichet & 1 bodek & they change off. They feel very uncomfortable with the quality of the bedika especially after the first 100 at that speed.

The largest reliable shechita is Alle Processing aka Meal Meat under the Nirbater. So we see now that the Nirbater is completely unreliable in Lamb so that must also call into question on his Beef, also.
Just look at the settlement in Texas. Alle Processing paid for a LUBAVITCH mashgiach to oversee their shechita operation in Texas and this poor Lubavitch almost lost his hand. See how you cannot trust 'them'?

A lot of Chassidishe never accepted the poskim disqualifying Lubavitch. To them it's just the Misnagdishe beating up on fellow Chassidim even if they agree that Lubavs are mostly weirdos.
The chutzpah is of the OU and the rest of the modern orthodox who ignore the RCA beis din's psak that Meshichistim are possul in kashrus.
The only shechita that is good should be a local shechita that you can go to and see.
Who shechts locally? There are small Hallal slaughterhouses scatterd around. David Elliot is in Scranton. Bierig is in Vineland, NJ. Anyone want to put their money where their mouth is?
