How often does a catering hall have the capable manager act also as the full time hands on mashgiach and is able to juggle both responsibilities without a conflict.

The manager is a very nice guy, but he's NOT the mashgiach! The have a separate full time mashgiach there.
Is this the Michael from brooklyn, he has Rabbi Ekstein whom Michael made him fire the commissary Mashgiach who was Rabbi Eksteins son in law and constantly found serious kashrus violations.

The Mendelson Manager is the Mashgiach as well.
I checked with Mendelson, and he insists that he's only the manager.
The mashgiach is a separate person.

Rabbi Ekstein fired him, otherwise he would lose the Hashgocha. He knows how to pick kashrus certifiers and Mashgichim.

Eckstrein potrays himself as BELZ. Michael lost the OU, KAJ, Kehila so he took the bottom.
